TheFitGal Chipotle Chicken Fajitas

When I used to live in Minnesota my apartment building was a block away from Chipotle, which I frequented quite a bit...like everyday.  So much so, that I got myself a “Chipotle boyfriend”! What is a that you ask? Well, it’s a Chipotle employee that knows your schedule so well he has your burrito bowl ready before you even walk in the door. Lucky for me, he was also the manager, so 9 times out of 10 my bowl was free. In short, get yourself a chipotle bf, you don’t even have to pay for extra guac!

But, if you can’t do that here’s a yummy recipe with low carb and healthy alternative tortilla options that are sure to satisfy your Mexican cravings! 

INGREDIENTS:

  • 2lbs of Chicken Breast
  • 3 medium sweet potatoes
  • 2 green peppers
  • 2 red peppers
  • 2 onions
  • 1/4c olive oil 
  • 2 Tbsp fresh lime juice
  • 2 cloves of minced garlic
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • chopped cilantro for garnish
  • parmesan cheese for serving
  • plain greek yogurt for serving
  • salt and pepper to taste 

DIRECTIONS:

Preheat oven to 350 degrees. Wash your sweet potatoes and prick holes in them with a fork. Bake in the oven for 50-60min or until soft. 

Cut up veggies and place aside. In a medium mixing bowl combine oil, lime juice, garlic, cumin, chili powder, oregano, salt and pepper. Set aside. 

Put half a Tbsp of butter or coconut oil into large skillet. Add veggies and mixing bowl of spices. Stir for 5-10min and then add cut up Chicken. While the chicken is cooking take sweet potatoes out of the oven, cut in half the long way and let cool.

Once the chicken is done cooking turn off heat and let sit. For lettuce wraps you’ll just need to peel off a lettuce layer and put chicken fajitas on top. For sweet potato boats, dig out the middle of the potato half and place fajitas in the center. 

Top with greek yogurt, guacamole, and/or parmesan cheese. Enjoy!!
